Garlic Butter London Broil over Creamy Mushroom Parmesan Orzo

This is one of those dinners that looks a little fancy but is still very doable on a regular weeknight. Thin slices of juicy London broil are piled over creamy Parmesan orzo with mushrooms, garlic, and herbs.

The best part is that the mushroom flavor can be tucked right into the sauce for picky eaters. No obvious mushroom pieces required.

Ingredients
For the London Broil
1 1/2 to 2 pounds London broil
1 tablespoon olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon butter
2 cloves garlic, smashed
2 to 3 sprigs fresh thyme

For the Creamy Mushroom Parmesan Orzo
2 cups dry orzo
2 tablespoons butter
8 ounces mushrooms, sliced
3 cloves garlic, minced
4 cups chicken or beef broth, divided
1/2 cup heavy cream
3/4 to 1 cup freshly grated Parmesan
1/2 teaspoon black pepper
Salt to taste
1 teaspoon dried thyme or a few sprigs fresh thyme
2 tablespoons chopped parsley, optional

Prepare the London Broil
  1. Pat the London broil dry and season both sides with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the London broil until nicely browned, about 3 to 4 minutes per side, depending on thickness.
  4. During the last couple of minutes, add the butter, smashed garlic, and thyme. Spoon the melted garlic-thyme butter over the meat as it finishes cooking.
  5. Cook until the center reaches about 128 to 130°F for medium-rare.
  6. Transfer the meat to a cutting board and let it rest for 10 minutes.
  7. Slice very thinly against the grain.

Make the Creamy Mushroom Parmesan Orzo
  1. Melt 1 tablespoon butter in a large skillet over medium heat.
  2. Add the mushrooms and cook until softened and browned, about 6 to 8 minutes.
  3. Add the garlic and cook for about 30 seconds.
  4. Remove the mushroom mixture from the pan and set aside.
  5. Add the remaining tablespoon of butter to the same skillet.
  6. Pour in the dry orzo.
  7. Toast the orzo for 3 to 4 minutes, stirring frequently, until some of the pieces begin to turn lightly golden.
  8. This little extra step gives the orzo much more flavor and helps it hold its texture.
  9. Add about 3 1/2 cups broth and the thyme.
  10. Bring to a gentle simmer and cook uncovered for about 8 to 10 minutes, stirring frequently.
  11. Add additional broth as needed until the orzo is al dente and creamy.
  12. Stir in the cooked mushrooms.
  13. Add the heavy cream and cook for another minute.
  14. Remove the pan from the heat.
  15. Stir in the Parmesan a handful at a time until melted and creamy.
  16. Taste and season with black pepper and salt if needed.

Picky Eater Mushroom Option
  • If visible mushrooms are going to cause immediate suspicion at the dinner table, blend them into the sauce instead.
  • After sautéing the mushrooms and garlic, place them in a blender with about 1 cup of the broth.
  • Blend until completely smooth.
  • Toast the orzo as directed, then add the mushroom-broth mixture along with the remaining broth.
  • Continue cooking normally.
  • You still get the savory mushroom flavor and creamy texture, but there are no mushroom pieces to inspect, remove, or dramatically announce.
  • For children who are especially cautious about new flavors, you can also start with just 4 ounces of mushrooms instead of the full 8 ounces.
To Serve
  • Spoon the creamy Parmesan orzo onto plates.
  • Arrange thin slices of London broil over the top.
  • Drizzle with a little of the garlic-thyme butter from the steak pan.
  • Finish with:
  • Freshly grated Parmesan
  • Chopped parsley
  • Freshly cracked black pepper
  • Serve with green beans, roasted broccoli, or a simple salad.

A Few Tips
  • Freshly grated Parmesan melts much more smoothly than pre-shredded cheese.
  • Keep the orzo slightly loose when you remove it from the heat. It will continue to thicken as it sits.
  • The secret to tender London broil is not only cooking it to medium-rare, but also slicing it very thinly against the grain.
  • And don't skip toasting the orzo. That simple step gives the finished dish a deeper, almost nutty flavor and keeps it from tasting like ordinary pasta in cream sauce.
This is definitely going into our late-summer dinner rotation. It feels special enough for a Friday night but still uses simple ingredients and one very practical picky-eater trick.

Simple Beef Kofta Patties (An Easy Iron-Rich Family Dinner)

​As spring begins and our days fill with sunshine, fresh air, and more activity, I’ve been especially focused on building meals that truly nourish my growing kiddos. These beef kofta patties came from a desire to increase iron-rich foods in a simple, wholesome way that still feels special at the table. They’re full of flavor, easy to prepare, and a wonderful way to bring something a little different into our home while supporting strong, healthy bodies for the season ahead.

Ingredients

1½–2 lbs ground beef (85/15 or 90/10 works well)
1 small onion, finely grated or minced
3 cloves garlic, minced
¼ cup fresh parsley, finely chopped (or 1 tbsp dried)
1 tsp sea salt
½ tsp black pepper
1 tsp paprika
1 tsp cumin
½ tsp ground coriander (optional but really good)
½ tsp cinnamon (very subtle, don’t skip if you can)
1 egg (helps bind, optional)

Instructions
1. Mix gently (don’t overwork)
  -Add everything to a large bowl
  -Mix just until combined

​2. ShapeForm into:
  - small oval patties (easiest for kids), or 
  - 
longer “finger” shapes (more traditional)
3. Rest (optional but helpful)Let sit 10–15 minutes if you have time...Helps flavors come together

​Cooking Options
Skillet (Best flavor)

  -Heat cast iron with a little olive oil
  -Cook 4–5 minutes per side
  -Get a nice brown crust

Oven (Easiest batch method)
  -400°F
  -Bake 15–18 minutes
  -Broil last 2–3 minutes for color

Air Fryer (Quick!)
  -375°F for 10–12 minutes
  -Flip halfway

Simple Yogurt Sauce (Highly Recommend)
Mix:
  -1 cup plain Greek yogurt
  -1 tbsp lemon juice
  -1 small garlic clove (grated)
  -Pinch salt

How to Serve

  -Kofta patties
  -Rice or warm sourdough flatbread
  -Cucumber + tomato salad or just sliced cucumbers
  -Yogurt sauce on the side

For Baby/Toddler

  -Break apart a patty
Serve with:
  -soft rice or mashed sweet potatoes
  -mashed cucumber or yogurt
It’s very iron-rich and easy to gum

Tips (from experience)

  -Grating the onion instead of chopping = super tender patties
  -If the mixture feels wet, add 1–2 tbsp breadcrumbs or almond flour
  -These freeze beautifully, raw or cooked

​Winter Sundays in our home are full in the best way. We start the day at church, come home to warm layers and busy hands, and spend the afternoon helping Dad with chores while the laundry hums in the background. By dinnertime, everyone is hungry and ready to slow down together. That’s when I reach for the Instant Pot. This chuck roast comes together quickly, fills the house with the coziest aroma, and gives us a comforting, nourishing supper without spending the entire day in the kitchen. Simple, dependable, and just right for a winter Sunday.

This is my go-to chuck roast when I need something hearty, comforting, and dependable without spending all day in the kitchen. The Instant Pot makes this roast tender enough to slice or shred, with rich flavor from simple pantry seasonings.
Serves: 6–8
Prep Time: 10 minutes
Cook Time: About 75 minutes total, including pressure and release

Ingredients
3–4 lb chuck roast
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme or rosemary
1 cup beef broth
1 tablespoon Worcestershire sauce
Optional: 1 onion, sliced

Instructions
1. Season the Roast: Pat the chuck roast dry with paper towels. Season all sides evenly with salt, pepper, garlic powder, onion powder, and dried herbs.

2. Sear the Roast: Turn the Instant Pot to Sauté. Add the olive oil. Once hot, sear the roast for 2–3 minutes per side until nicely browned. This step adds depth of flavor and is worth the few extra minutes. Remove the roast and set it aside briefly.

3. Deglaze the PotPour in the beef broth and Worcestershire sauce. Use a wooden spoon to scrape the bottom of the pot thoroughly, lifting all the browned bits. This prevents a burn notice and adds flavor.

4. Pressure Cook: Return the roast to the pot. Add sliced onions if using. Lock the lid and set to High Pressure for 60 minutes.

5. Release Pressure: Allow a Natural Release for 15 minutes, then carefully quick-release any remaining pressure.

6. Rest and Serve: Remove the roast and let it rest for 10 minutes before slicing or shredding.

Serving Notes
  • Slice for classic Sunday dinners with Parmesan rice, mashed potatoes, and roasted vegetables.
  • Shred for sandwiches, tacos, or freezer meals.
  • The juices in the pot make a simple au jus or gravy.

​Homeschooling moms, I see you! Between lesson plans, field trips, and daily activities, dinner can feel like one more thing to juggle. Enter Instant Pot Sloppy Joes, a quick and nutritious meal that will satisfy your family and allow you more time for what matters.
​
This recipe uses grass-fed beef, a healthier alternative packed with omega-3s and free of antibiotics. Pair it with your favorite buns, a quick salad, or some steamed veggies, and you’ve got dinner ready in under 30 minutes!

Ingredients: 
2 pounds of grass-fed beef
1 small onion, diced
1 green bell pepper, seeded and diced
½ cup water or beef broth
1 teaspoon granulated garlic
1 Tablespoon liquid aminos (soy alternative)
1 Tablespoon Worcestershire sauce
1 Tablespoon brown sugar 
¾ cup ketchup
1 Tablespoon tomato paste
1 teaspoon Dijon mustard
1 teaspoon dried oregano

Directions:
Sauté the Beef and Veggies:
Set your Instant Pot to the sauté function. Add the ground beef, breaking it up as it cooks. Once browned, drain excess fat if necessary. Add the onion, bell pepper, and garlic. Sauté for 2–3 minutes until softened.

Mix the Sauce:
In a small bowl, whisk together ketchup, tomato paste, mustard, oregano, liquid aminos, Worcestershire sauce, brown sugar, and water. Pour the mixture into the Instant Pot and stir to coat the beef evenly.

Pressure Cook:
Cancel the sauté function. Seal the Instant Pot lid and set it to manual pressure for 5 minutes. Once the timer goes off, allow pressure to do a natural release for about 5 minutes. 

Thicken the Sauce:
Open the lid and stir. If the mixture is too thin, turn on the sauté function and simmer for 2–3 minutes until thickened.

Serve and Enjoy:
Spoon the sloppy joe mixture onto buns or serve over baked potatoes. Serve with a side of veggies or coleslaw for a balanced meal.

1 1/2 pounds grass fed flank steak, thinly sliced
4 teaspoons avocado oil, divided
1 red bell pepper, sliced thin
1 yellow bell pepper, sliced thin
1 yellow onion, thin sliced
1 tablespoon chili powder
2 teaspoons ground cumin
1 1/2 teaspoons oregano
1/2 teaspoon granulated garlic
1/2 teaspoon onion powder
1 lime
Homemade sourdough tortillas, cilantro, avocado, lime wedges and any other toppings you like.

Directions: 
1. Preheat the oven to broil and adjust the rack to the upper third position.
2. Line your sheet pan with foil and drizzle a little avocado oil. 
3. In a small bowl combine all of the spices.
4. Add the sliced peppers and onions to the pan and drizzle with 2 teaspoons of avocado oil, half of the mixed spices, salt, and pepper. 
5. Toss together until well-coated, then spread them into a single even layer. 
6. Broil for 5 minutes or until just tender.
7. While the veggies are broiling, add all the flank steak to a bowl and combine with the remaining spices and oil. Toss to coat. 
8. Remove the pan from the oven and push the peppers and onions all to one side. 
9. Add the sliced steak to the pan spread into a single layer and broil for 3-5 minutes or until the steak is cooked to your liking.
10. Take out from the oven and drizzle lime juice over the dish. Serve alongside homemade sourdough tortillas, avocado slices, fresh cilantro, or any other toppings you would like.

I have a passion for crafting homemade dishes, and I'm always up for the challenge of creating pantry staples from scratch. Not only is it an enjoyable endeavor, but it also puts the flavor entirely in my hands! Last December, we whipped up this delightful dish, and the reactions were priceless. With my husband exclaiming, "Wow!" and my kids asking for seconds and thirds, it was undoubtedly a win. To recreate this culinary triumph, prepare creamy refried beans in the Instant Pot, then whip up a savory enchilada sauce on the stovetop as your meat cooks. Finally, assemble everything into layers, generously smothered in that irresistible homemade enchilada sauce, resulting in a dish guaranteed to elicit smiles and satisfaction with every bite! 
Ingredients: 
  • 2 lbs ground beef (you can use 1...but we needed 2 for it to be hearty)
  • 10 ounces of red enchilada sauce, (or make homemade enchilada sauce)
  • 1 16 ounce can refried beans (or make homemade in the Instant Pot using dried pinto beans)
  • 12 soft corn tortillas, street taco size/individual taco size.
  • 1 15 ounce can organic black beans, drained and rinsed
  • 1 14.5 ounce organic petite diced tomatoes, undrained
  • 3 cups shredded Mexican blend cheese,
  • 1 Tablespoon chili powder
  • 1 ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
Directions: 
  1. Preheat the oven to 400F.
  2. Cook ground beef in a large sauce pan.
  3. Spread half of the enchilada sauce in the bottom of the dish.
  4. Add the remaining enchilada sauce, black beans, spices, salt, ground beef, and undrained tomatoes to the large sauce pan with cooked beef.
  5. Spread half of refried beans on 6 corn tortillas.
  6. Place the first layer of tortillas, bean-side up, over sauce in dish, these will overlapping and I used 6 for each layer.
  7. Spread half of beef enchilada mixture over the corn tortillas that are layered in the dish.
  8. Then layer with 1 cup of cheese.
  9. Repeat layering – take 6 more corn tortillas and spread with the rest of the refried beans and place as another layer in your 13X9 baking dish. Then layer with the enchilada mixture and remaining shredded cheese.
  10. Bake uncovered for 25 minutes or until hot. The center should be hot and the casserole should be bubbly around edges. Let stand 10 minutes before cutting into 8-12 pieces.
  11. Top off your dish with your favorite enchilada toppings – shredded lettuce, sour cream, avocado, etc.

Savor every bite atop creamy mashed potatoes or cauliflower mash for a hearty winter meal that's both budget-friendly and guaranteed to please the entire family, even the little ones.

​Ingredients
Patties
1 lb Lean Grass-Fed Ground Beef
1/3 cup Italian Bread Crumbs
2 tsp Ketchup
1 tsp Mustard (I use yellow mustard)
1 tsp Worcestershire sauce
1/2 tsp Granulated Garlic
1/2 tsp Onion Powder
1 tsp Dried Minced Onion
1 tbsp Extra Virgin Olive Oil or avocado oil
 
Gravy
2 tbsp of Brown Gravy Mix
2 cups hot Water
1 tsp Ketchup
1/2 tsp Worcestershire sauce
 
Directions:
  1. In a large bowl add the ground beef and all of the patty ingredients and combine using your hands until it is all well-incorporated.
  2. Form the beef mixture into hamburger patties, set aside on a plate or cutting board.
  3. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  4. Cook patties on both sides until no longer pink. (about 4 minutes per side)
  5. Lower temperature to low.
  6. Whisk together brown gravy mix and water until well-blended.
  7. Whisk in ketchup and Worcestershire and pour over patties in skillet.
  8. Allow to simmer until gravy warms and thickens.
 
Optional: I also recommend sautéing onions in butter before cooking the patties for a nice addition to this meal.
